Escalante Harvest

Ty and I spent some time with his family down in Escalante to harvest the goods from this years veggie crop. I have never seen so many potatoes in my life and I wasn't quite sure what they planned to do with them all. It was good to be with everybody before we left!

Hubby Highlight

Since I spend most of my time sharing what I love, I thought I'd highlight my hubby today! Tyler LOVES draft horses, especially these beauties. Quite the man for the job, he's perfect for the size of these Belgian Draft Horses (Star & Stripe, respectively). I am still terrified to approach them. Believe me, it takes a serious amount of self-talk, especially when he hands over the lead rope (I look at him thinking, "Are You Crazy?") But I sure do enjoy watching him work with them. It's powerful and really fascinating. Here are a few photos of what my hubby has been up to lately....

Chocolate Chocolate-Chip Zucchini Bread

This Chocolate Chocolate-Chip Zucchini Bread is absolutely delicious. I bake with whole-wheat flour, which definitely makes a difference in batter consistency. If I don't add a little bit more oil or take it out early then it tends to be a bit dry - but hey! It's on the healthy side, right? Enjoy.




2 1/2 cups all-purpose flour

1/2 cup cocoa

1 tsp baking soda

1/2 tsp baking powder

1 tsp salt

1 1/2 cups sugar

3 eggs

1 cup olive oil

2 tsp vanilla

2 packed cups grated zucchini (don't peel it)

1 cup chocolate chips


Preheat oven at 350 F. Spray two 9x5 inch pans with nonstick spray.

In a large bowl, stir together flour, cocoa, baking soda, baking powder and salt. In a medium bowl, beat the sugar and eggs until light and fluffy. Add the oil and vanilla. Add to the dry ingredients along wit the zucchini and chocolate chips. Stir just until combined, and divide between the loaf pans.

Bake for 50-60 minutes, or until tops are cracked and springy to the touch. Makes 2 cakes.

My Man

Doesn't this look neat? I think it's fascinating when my hubby puts his team together. This is what he's been up to today - mowing hay the old fashioned way! How fun is that! (it really is fun). And quite simple to learn. Until, of course, these big Belgian Draft Horses decide to take off on you. Then what. Life on the farm. Simply simple.

The Beautiful Bride

I can't believe she's married! Time goes by so fast I can hardly remember the day I was married and it's only been 9 months! Mom & Dad are halfway done - strange - with only 5 more kids to go (the size of most families). I absolutely loved watching my little sister prepare and enjoy one of the best days of her life. Kanani means, The Beautiful One, and there couldn't be a more perfect name for such a beautiful bride. She looked absolutely gorgeous! And what an AWESOME weddding/reception. We had quite the party! I'm so excited to have Ryan in our family; Tyler & Jared are loving the idea of new brother-in-law. Maris Youd, a good family friend, did her hair and makeup. Excellent job! We had a great time and I'm so excited to post more.

Temple Day

I really wanted to be there when Kanani went through the temple. For me it was the one thing I wished my family was there for when I was preparing to marry Tyler. I'm so happy for Kanani & Ryan! Congratulations Kanani.
